Do The Locomotion!


(We didn't take this photo)
Wasn't sure whether we would be able to do this or not, (had a scheduled day off for this for two months now, but the car has been through a new head gasket and a new alternator) but, we're headed to the Cuyahoga Valley Scenic Railroad for a train ride today.  We did this last year, and loved it.  Bridget is "makin' bacon" in the kitchen (bacon egg and cheese biscuits) and getting ready, boys invited their friend John over to go w/ us, and we've got a day off of school and work planned to go have some fun!  Wooooot, wooooot!

Lunchtime

Smoked Fish

So we found Salmon on sale at Kroger for $4.99/lbs.  We also ran across this raspberry fish marinade that looked delicious, but it was $8.59 a bottle!  $8.59!!!!  So, we came up with the GRAND idea to check out the ingredients and try to build the sauce for cheap at home. 

1 Jar Raspberry Preserves
2 Chipotle Peppers
Apple Cider Vinegar
Sugar
Jalepeno

A little bit of time simmering on the stove, and "Walah!" (said with a french tone)....

We used a fish cure that I Lah Lah Love!!!!!!  It's out of Steven Raichlen's Barbecue! Bible (My go to for anything grill related, countless recipes in this book have proved to be a spiritual experience) but this one makes even the blandest fish incredible!

1/2 cup dark brown sugar
1/4 cup salt (kosher or sea)
1 TBSP cracked black pepper
1/2 TBSP dried dill
1/2 TSP ground coriander

Mix this up well and then sprinkle over fish like a rub, and refrigerate for 4 hours.  The salt, sugar cure dehydrates the fish, firming it up.  After four hours you rinse it and go to the smoker, then you can smoke the fish as long as you want.....it's cured!  The result is a sweet salty smoked fish that is yummmmmmmy~

This time around, after curing, we went back to the fridge w/ the fish in the marinade above over night.....  it'll be smoking today for several hours.
